black bean salad
heres the skinny on the salad.
this recipe is so simple its ridiculous.
serves 4-6 or 2 for a few days.
4 cans black beans rinsed and drained
1 green bell pepper chopped
1 red onion diced
2 tomatoes diced
1 handful of cilantro chopped
2 cloves garlic minced
juice of 2 lemons
2 pinches of salt
after all veggies are diced and the beans are rinsed and drained simply combine everything into a bowl and let it marinate for a few hours before serving.
whats awesome about this salad is its perfect for the Summer heat. its light refreshing and full of flavor.
you can eat it alone, with chips or even served over a baked potato, yummy!
